IMG_0753Les Dame d’Escoffier Chapter Descend on Brea For A Fantastic Sunday! Cha Cha’s Latin Kitchen in Brea was the site for some fun Sunday happenings with some of our Les Dame members and their affable guests who all enjoyed this food frenzy. A big thank you goes out to Dame Jennifer Morris (who also manages our web site), and her Client Don Myers and his team, who made it such a special day. Don Myers and his partner Peter Serantoni were named “Restauranteurs of the Year” by OCBJ this past August of 2014. Both have been in the restaurant business for many years. This is quite an honor indeed. Cha Cha’s will be celebrating their 5th year in business this coming fall.

Well, if you have not been here I suggest you RUN not WALK to this restaurant.  The area is a charming little corner of Brea with shops, restaurants, a huge movie theatre, fountains and best of all free & easy parking. We began our Sunday bellied up to the bar. Now, I see nothing wrong with that, but cannot recall the last time I was sitting at a bar at 10:00am.  Don, and bartenders Justin and Eddie walked us through recipes and their trade secrets for three specialty Margaritas served here at Cha Cha’s.  As Don explained, their margaritas are served in a 13 oz. tulip glass and also a 27 1/2 oz. bowl of a glass. All margaritas use the freshest of ingredients and are hand-shaken. No blenders are whirling around this bar. They also make delicious frozen, slushy Mojitas. These are made in a Froster Freeze ice cream machine in large quantities, creating the perfect texture and flavor. They were so delicious. It is difficult to note the exact recipe, but key ingredients include: Myers Rum (Premium), Simple Syrup, fresh Lime Juice, Lemonade and Mint Leaves.  We also tasted their house-made Sangria which is also excellent.

Here are the Recipes (single serving) for three of Cha Cha’s many Signature Margaritas…

The Classic Cha Cha Margarita

Ingredients:

1 1/2 oz.          El Jimador Tequilla (100% Blanco Agave-House Brand)

3/4 oz.            Cointreau

2 oz.                Sweet & Sour (Equal parts of fresh Lemon & Lime Juice & Simple Syrup)

1/4 oz.            Agave Nectar (highest grade)

1 slice              Lime Garnish

Handful           Ice

1 tbsp.             Salt (optional for the rim of the glass)

Directions:

-Place all ingredients in a shaker, and add ice.

-If salt is desired, wet rim, place salt on plate and dip rim of glass into the plate to coat.

-Shake the container vigorously for 1 minute.

-Strain into glass and add garnish of  lime

 

Summer Watermelon Margarita

Ingredients:

1 1/2 oz.          El Jimador Tequilla (100% Blanco Agave- House Brand)

2 oz.                Watermelon Juice (fresh seedless watermelon blended)

1/2 oz.             Hibiscus Tea Mix

1/2 oz.             Fresh Lime Juice

1/2 oz.             Black Pepper Agave

Slice                Slice of Watermelon for garnish

Directions:

-Place all ingredients in a shaker, and add ice.

-Shake the container vigorously for 1 minute.

-Strain into glass and add garnish of watermelon slice

Mango & Habanero Chili Margarita

Ingredients:

1 1/2 oz.          Pueblo Viejo Tequilla (Blanco)

1/2 oz.               Habanero Syrup

1 oz.                   Sweet & Sour (Equal parts of fresh Lemon & Lime Juice & Simple Syrup)

1/2 oz.              Mango Puree (they use Perfect Puree- purchased frozen)

5 Leaves          Mint Leaves (fresh and cut into pieces)

Preparations:

-Prepare Simple Syrup mixture. (Equal parts of sugar and water simmered and cooled.)

-Prepare the Sweet and Sour mixture. (Equal parts of fresh Lemon/Lime Juice & Simple Syrup)

Habanero Syrup– Take Simple Syrup (equal parts sugar and water) and simmer on stove with a whole Habanero Chili for 1 ½ hours. Let cool and place in refrigerator for 48 hours. (No need to cut it, however do not cut into a Habanero Chili without wearing gloves.)

Directions:

-Place all ingredients in a shaker, and add ice.

-Shake the container vigorously for 1 minute.

-Strain into glass and add garnish of mint leaf

Our Les Dames Special Brunch Menu- We enjoyed a special Brunch Menu just for our group, however this is very representative of the many offerings. I could not stop eating the Guacamole and chips that were so light and delicate. The Tomatillo Sauce is really amazing. I enjoyed the Chicken Flautas, but the room got very quiet when the food arrived and I could see that everyone was enjoying what they had selected. The Flan was the best I have ever tasted. It was so creamy and delicious. It was an amazing day and I cannot wait to return!!!

-Chicken Flautas with a delicious Mango salsa (this is what I enjoyed)

-Tres Leche Cake

-Flan with a dollop of Whipped Cream (the best Flan I have ever had!)

-Banana Taquitos- Crisp ‘taquitos’ filled with dark chocolate, bananas, toasted pecans, served with cajeta sauce & vanilla bean ice cream

-Enchilada & Wine Wednesday- Half off Enchiladas, all wines & House-made Sangria

Second Restaurant Just Two Doors Down…..Trattoria Brunos Just two doors west is Don and Peter’s second restaurant, Brunos which is open for dinner. This has been voted one of the Top Ten Restaurants by Orange Coast Magazine. With a focus on homemade pastas, fresh seafood, and Northern Italian cuisine, this is on our list for our next visit!  They also have  Happy Hour, and Italian wines (all priced at $8, by the glass). Happy Hour is Nightly from 4:00-7:00pm. Food and drink specials starting at $4.
