My friend and Chef, Pascal Olhats is the Owner of Pascal’s a lovely restaurant in San Juan Capistrano. By day it is a charming café with dine in, or to go offerings—from quiche to sandwiches and salads, to complete meals. Pastries are made on-site each morning. Then in the evening, there is wine by the glass or bottle, a complete dinner menu for dine in or to go ordering. Then Thursday, Friday and Saturday evenings guests are in for a real treat with Pascal right there serving a formal Prix Fixe menu beginning at 6:00pm.

During the day the options are endless…

The other day our writing group was welcomed to his lovely restaurant. The International Food Wine and Travel Writers Association (IFWTWA) had our SoCal Regional Meeting here and we were treated like kings and queens!   Here was our fabulous menu:

The appetizers included:

-Petite onion tart and pesto tomato tartelettes which paired perfectly with the white wine being served.

-Assiette of housemade pistachio country pate and pork rillette, duck saucisson with housemade mustard and pickles from local, farm-picked cucumbers

 

The next course was…

-Salade Lyonnaise. A Classic French Salad with Butter Lettuce, Frisee, Smoked Bacon Lardons & Poached Farm Egg with a Dijon Mustard Dressing.

 

 

 

 

 

-Seabass au Thyme. Pascal’s Specialty Chilean Seabass with Thyme Crust, Seafood Chardonnay Sauce and sitting on a bed of Tomato Concasse. The sauce had hints of mussels and shrimp and was divine!

 

 

 

 

 

-“Macanese” egg tart with berry compote. Recipe adapted from a Macau celebrity chef’s original “secret” creation when Pascal visited Macau as a guest Chef. (Per Wikipedia, Macau (also spelled Macao) is an autonomous region on the south coast of China, across the Pearl River Delta from Hong Kong. A Portuguese territory until 1999, it reflects a mix of cultural influences. It has giant casinos and malls on the Cotai Strip, which joins the islands of Taipa and Coloane and has earned it the nickname, “the Las Vegas of Asia.” One of its more striking landmarks is 338m-high Macau Tower, with sweeping city views.)

A Delicious Sense of Place At Hue Oi Vietnamese Cuisine

I was recently invited to visit an authentic Vietnamese restaurant in the heart of Little Saigon. It was delicious, unique and quite a family affair. Recipe: Salmon Asian Marinade

Everyone asks for this recipe and can be used on other fish…Enjoy!

Ingredients: For Four Servings

-2 cloves of Garlic finely minced (I use cubed frozen Garlic from Trader Joes near veges)

-4-5 tablespoons of Sesame Oil (I get mine at Trader Joes)

-1/4 cup Olive Oil

-3 tablespoons of vegetable oil

A Welcome New Restaurant Opens In Laguna Beach, Meet “Oak”
